Carrot Sheera

This is one of my moms recipes that I have enjoyed for many years! Its simple, quick and always a hit!

Step by step Carrot Sheera recipe:

  1. Roast sooji , besan and wheat flour on Medium to low heat with half the ghee. Stirring frequently until the sooji is golden brown. IMG_6412
  2. In the same pan add remaining ghee and shredded carrots and cook covered for 5-6 minutes. Stir it few times in between.IMG_6413
  3. Add 2-1/4 cups of water to the pan with carrots and bring to boil.IMG_6414
  4. Add the roasted sooji to the pan, stir well and cover the pan. Cook for 2-3 minutes.IMG_6416
  5.  Add sugar and raisins and cover the pan for 2 minutes.IMG_6417
  6. Turn off the stove and add the mixed fruit essence.IMG_6418
  7. Garnish with sliced almonds and pistachios.IMG_6421

Carrot Sheera Recipe

Prep time: 10 mins  Cooking time:15 mins    Total time: 25 mins

 

Ingredients:

1 cup fine sooji/rava/semolina

1 tablespoon  gram flour/besan

1 tablespoon whole wheat flour

3/4th cup sugar

2 cups shredded carrots

6 tablespoons ghee

10 almonds

10 pistachios

2 tablespoons raisins

1 teaspoon mixed fruit or vanilla essence

Directions:

  1. Roast sooji , besan and wheat flour on Medium to low heat with half the ghee. Stirring frequently until the sooji is golden brown. Take it out in a bowl.
  2. In the same pan add remaining ghee and shredded carrots and cook covered for 5-6 minutes. Stir it few times in between.
  3. Add 2-1/4 cups of water to the pan with carrots and bring to boil.
  4. Add the roasted sooji to the pan, stir well and cover the pan. Cook for 2-3 minutes on low heat.
  5.  Add sugar and raisins and cover the pan for 2 minutes.
  6. Turn off the stove and add the mixed fruit essence.
  7. Garnish with sliced almonds and pistachios.
